Lobster Ceviche & Avocado

It’s LOBSTER SEASON! Why not get your inner chef on and have at go at this amazing lobster recipe from Head Chef at Marcus’ Danai Hongwanishkul. This was also shared in this months  Newsletter »


Lobster:

Ingredients:

1.5lb lobster
1 lemon
1 onion
2 sticks of celery
2 liters of water
4 tbs salt

Directions:

  1. Bring water, salt, celery, sliced lemon and onion to a boil
  2. Add your lobster and cook for 4-5 minutes.
  3. Take lobster out of pot, remove the claws and in add to water for additional 3 minutes
  4. Remove meat from shell and remove cartilage
  5. For ceviche diced lobster meat

Coconut Ceviche Liquid

Ingredients:

1 can coconut
1 jalapeno seeded
1 shallot
1 tbs sugar
Juice of 3 limes
Salt (to taste)
1 ts stem of cilantro stem

Directions:

  1. Chop shallot, deseed jalpeno, chop cilantro stem
  2. Mix everything together

Assembling the Ceviche

Ingredients:

1 whole lobster
½ cup of ceviche liquid
2 tbs cilantro
1 lime
1 cup of corn chips
1 cubed avocado
Chopped cilantro

Directions:

  1. Mix ceviche liquid, lobster together
  2. Top with avocado, chopped cilantro
  3. Side of corn chips
